Healthy Cauliflower Recipes

Is it really Monday already?! I have to say, this weekend went way too quick. It has been a wet, cold weekend here in Cali, so I spent lots of time catching up on work. Did any of you have a crazy exciting weekend?

Today Amy and I are in the kitchen making some comfort foods. Believe it or not, cauliflower makes an amazing substitute to mashed potatoes and fried rice. No kidding! You just have to try these 2 recipes! They're so easy and extremely healthy. Check out the chart below for all of the incredible health benefits of cauliflower.



To be honest, I didn't even realize it was packed with this many nutrients until I looked it up. I mean who doesn't need a little extra vitamin C, K, folate, fiber, B6, and who would have thought, Omega 3 fatty acids?! Is it crazy to admit that I'm truly excited about cauliflower? Now, to make Mashed Cauliflower, steam the cauliflower until it's truly soft. You need to be able to effortlessly stick a fork in it. Then just toss the whole head inside the blender with about 1/4 of a cup of liquid (I made use of almond milk, but nonfat cows milk works well too) and blend it up until it's smooth. We added just a little garlic salt, pepper, and olive oil and it was so great!
For the 'rice' recipe, grate the raw cauliflower in the mixer or using a hand grater like you would cheese. You can then steam or saute it in a pan. Amy and I stir fried it in a tiny bit of sesame oil, soy sauce, and a Chinese 5-spice blend. It came out just like fried rice and was so great. Even Gunter, who Never eats cauliflower, polished it off Fast!

I've been making mashed cauliflower for years, but the rice was new to me and I have to say, I can't wait to test it with different spices. I think curry would be great too. What do you all have to say?
